Dinners at Maggie’s House, North Stonington
This summer, I lived with Maggie and her parents at their home in North Stonington, Connecticut, while the two of us were in Yoga Teacher Training. Maggie’s mom cooked us so many delicious, homemade dinners! Above is a dish Maggie, Chelsea and I made: pesto pasta made with fresh basil from the garden. We also made a version of the pesto with avocado, which was really good. We had a salad along with the pesto pasta. One night we helped Maggie’s mom make an amazing pasta salad with fresh herbs, zucchini and yellow squash from the garden, as well as ham, peppers, mozzarella and Parmesan cheese.
Maggie’s mom made us lots of great salads. Maggie and I made ourselves a really good dinner one night, again with fresh herbs, zucchini and yellow squash from the garden. We sautéed it all with onions, garlic and olive oil. We poured eggs over the veggies and covered it all with cheese, to make a wonderful frittata. This was really delicious… and healthy, until we smothered it in ketchup and ranch!
One of last dinners was my favorite. Kiyo came to visit and brought my grandma’s cheese bread we brought back from Minneapolis. Maggie’s mom made an amazing curried chicken salad and roasted sweet potato and onions. We had a bunch of different pickles and potato chips.
Here’s just one dessert (most nights we didn’t have dessert, or we just had a bite of Nutella): shortcake with peaches and blackberries. Maggie and I whipped some fresh cream, my favorite part!
I was so spoiled this summer!
